Chickpea Salad with Coconut Vinegar Dressing

I am absolutely loving this salad!  In the wintertime I cannot get on board with the typical ice-cold romaine salads.  This beauty of a salad, packed with protein thanks to the chickpeas, is a filling and delicious meal all by itself!

P.S.  Coconut vinegar does NOT taste like coconut!  I find coconut vinegar to be less vinegary tasting than apple cider vinegar.  Give it a try and you’ll fall in love with this new ingredient and always keep it stocked in your pantry!

Chickpea Salad with Coconut Vinegar Dressing

Dressing Ingredients:

Salad Ingredients:

Instructions:

  • Mix dressing ingredients together with a fork in a small bowl.

  • Place the salad ingredients in a re-sealable container.

  • Pour the dressing over the salad ingredients, close the lid and shake thoroughly.

  • Let set in refrigerator for at least a few hours to wilt the kale and marinate the flavors all the way through.

  • Serve.

    I have never heard of coconut vinegar but can’t wait to try it. I don’t like apple cider vinegar because it is too strong tasting so I think this may be a good alternative. Where can I purchase coconut vinegar?

    Hi, what can I use instead of garbanzo beans…never been a fan of those.

      You can skip the beans if you wish. This is really just a template…you can use your favorite veggies or whatever needs to be used up in your fridge. Some orange pieces or chopped apples would be lovely in this too! Enjoy!
