  • 1/8 cup raw coconut nectar

  • 1.5 Tbsp. cinnamon powder

  • 2.5 tsp. cardamom powder

  • Add the walnuts, shredded coconut, coconut sugar and coconut nectar into your food processor container.  Blend until smooth and creamy (about 7 minutes).  You may need to occasionally scrape down the sides of the processor container.

I tried making this. Is the recipe correct? Putting in all those walnuts and coconut and one quarter cup of sweetening was too much for my blender. I had to add in about 2 to 3 cups of water, at least, before it would actually turn and then I had to continually take out the butter from the blender and add in more water at the bottom before everything actually turned. Have you left out how many cups of liquid this needs? In my part of the world using coconut sugar and nectar is too expensive. Any other suggestions besides honey? It did work in the end but was much paler than your picture. It still tasted wonderful.

Hi Catherine! Yes, the recipe is correct. If you used a blender, instead of a food processor (as noted in the reicpe), that’s probably the reason you had an issue. Good job though improvising and coming out with something you loved!

As far as substitutions, I’d suggest pure maple syrup or agave; however, note that the coconut sugar are granules (like brown sugar) and coconut nectar is a thick liquid (like honey) — so be cautious when substiuting amounts to get the right texture.

Thanks for letting me know how much you loved it! 🙂
