Mini Vegan Chocolate Lava Cake (Sugar-Free)

If you are like me and love the richness of chocolate then prepare to meet your new BFF!  Even though this mini chocolate vegan cake is sugar-free it is full of flavors and depth which will fancy your palette and heart!

The natural sweetness of the raspberries pair beautifully with the dark depths of this moist cake…each make each other more vibrant and alive!  Anyone in your life who loves whole foods, vegan, vegetarian or Paleo recipes will simply adore this ooey gooey heavenly cake!

Mini Vegan Chocolate Lava Cake (Sugar-Free)

Ingredients:

Instructions:

  • Mix 2 Tbsp. chia seeds with 6 Tbsp. of water and set aside for 5 minutes to gel up.

  • In a small bowl mix the cacao powder, coconut flour and vanilla extract together.

  • Add chia gel, coconut oil, full-fat canned coconut cream and coconut milk beverage to the dry ingredients in the small bowl and mix thoroughly with spoon.

  • Grease a ramekin generously with coconut oil.

  • Pour the cake batter mixture from the small bowl into the ramekin.

  • Bury the chocolate squares in the middle of the cake batter mixture.

  • Bake at 350 degrees for 12 minutes for a super moist cake; bake for 15 minutes for a more traditional dryer cake-like texture.

  • Remove from oven and let set for 5 – 10 minutes before removing the cake from the ramekin.

  • Upon serving top with fresh raspberries and a dollop of full-fat canned coconut cream.

      Certainly you could sweeten it a bit by adding 2 Tbsp. of pure maple syrup, local honey or raw coconut nectar. I am guessing it may need a minute or two of additional cook time because it will make the batter more moist. Let us know how it goes!
