Magical Melty Maple Ice Cream

So I am off caffeine for 30 days…what is a gal to do?  It seems my sweet tooth has ramped up since ditching caffeine last week.  Enter this idea for a rich, decadent ice cream which tastes like it breaks all the rules!

I’m not kidding…my hubby and I were so overtaken by how gosh darn delicious this was we just kept looking at each other as if we saw a ghost!  I was seriously licking the bowl so I wouldn’t waste an absolute drop…classy, I know.

  • 1 can full-fat coconut milk, chilled overnight in refrigerator

  • 1.5 frozen bananas

  • splash of pure maple extract (concentration strength varies from brand to brand…I prefer Frontier which is highly concentrated)

  • splash of pure vanilla extract

  • 1/8 – 1/4 tsp. cinnamon powder

  • 2-3 pinches of sea salt

  • 3 Tbsp. pure maple syrup


  • Blend all ingredients in a high-power blender until smooth and creamy.  Serve in a bowl with a  spoon!
