Mango Pineapple Sorbet Smoothie

July 2014 044Do you love tropical fruit and an ice-cream-like texture?  Well, you are going to love this refreshing, summertime smoothie!

Instead of cocktails on the deck after work try a smoothie on the deck while basking in the sun for your vitamin D!  Pretend you are on a beach somewhere dipping your feet into the sand and watching the cool, clear ocean waves roll in and out.

 

Mango Pineapple Sorbet Smoothie

Ingredients:

  • 1 heaping Tablespoon of coconut oil

  • 1 cup coconut water

  • 2/3 cup frozen mango

  • 2/3 cup frozen pineapple

  • 1 frozen banana

  • splash of pure vanilla extract

Instructions:

Blend in a high-power blender until smooth and creamy!  Serve.

      Hi, yes you can use a regular blender (it isn’t perfect but it is pretty good) — the key is to implement my specific blending tips when using a more modest blender.     This smoothie looks right up my alley. I am committed to making some small changes to find more happiness with life. Maybe starting out with non-green ones will help me build some momentum. What can I use in place of the coconut oil if I can’t find it at the store?

      Hi Gina, so glad the Mango Pineapple Sorbet Smoothie looks like something you could incorporate into your routine. In lieu of the coconut oil you could put a squirt of hemp or flax oil but honestly coconut oil really gives it that tropical, decadent flair.

      I usually don’t use a lot of high-sugary fruits but this is an exception.
