Tofu Tacos
I was craving tacos last night but I’m not so big on ground beef…what to do? Tofu tacos to the rescue! Even the hubby gave these the seal of approval. They come together pretty quickly and are quite tasty if I may say so myself. They are also jacked in protein (even more so when you use sprouted tofu)!

Tofu Tacos
Ingredients:

package of organic sprouted non-GMO tofu (I like Trader Joe’s brand)

garlic powder
-
sea salt
-
organic olive oil
-
corn tortillas
-
Toppings:
-
chopped avocado
-
salsa
-
chopped romaine lettuce
-
hot sauce
Directions:
Heat a large skillet to medium heat with a few tablespoons of olive oil. Remove tofu from packaging and dry as much as possible with paper towels. Loosely chop tofu and place into heated skilled. Continue to “chop” tofu until ground beef texture is achieved (I like to use my Mix ‘N Chop Pampered Chef tool). Mix in taco seasoning, garlic powder, and sea salt. Do not add any water or other liquids because you actually want to cook out the liquid stored in the tofu. Keep tossing (maybe turn up the temperature a bit) until tofu bits are crispy. Heat corn tortillas in skillet and top with tofu bits and desired toppings.




It’s important to read ALL your food labels before purchasing. For example, let’s take a look at two different taco seasonings. Maltodextrin is a food additive produced from starch by partial hydrolysis and is absorbed as glucose; commonly used in production of sodas and candy; common ingredient in processed foods. Modified Corn Starch is a derivative of corn, chemically altered to dissolve quickly and serve as a thickener; people who have wheat and gluten allergies should avoid products with these ingredients. Autolyzed Yeast Extract is used as a flavor enhancer; contains MSG; many food producers have replaced monosodium glutamate with yeast extract, which is cheaper, requires no E-number labeling, and allows food producers to claim their product is ‘all natural’ or ‘with natural flavorings’.

I would never ‘usually’ consider eating tofu — but the idea of cooking it until it’s crispy makes me think I could give it a try

Jen, thank you, these look great! I am a 90% vegetarian/vegan. I only like tofu if it is crispy…not too big on the slimy! I look forward to more of your healthy recipes!

I like using the imitation crumbles that look like ground beef. I’ve pretty much given up processed food and shop mostly in the produce section of the grocery store. I like finding new recipes to make that are a healthy version of an old favorite. Thanks for sharing.
