Sweet Potato Pillow Puffs
Do you like sweet potatoes but you’re bored with the usual preparation method? Me too! So I created Sweet Potato Pillow Puffs to keep super-duper healthy sweet potatoes in our menu lineup! I even went one step further and made this a crock pot recipe for all you busy folks out there who have asked for convenience. I personally don’t like the skins of the sweet potatoes so I usually peel them but it is totally optional based on your preference.

Sweet Potato Pillow Puffs
Ingredients:

2-3 extra large sweet potatoes (or 6-8 small sweet potatoes)

3 Tbsp. coconut oil
-
2 Tbsp. chili powder
-
2 Tbsp. cinnamon
-
1/2 cup filtered water
Peel and chop sweet potatoes into large chunks (approximately 2″x2″ but don’t worry about being exact). Place water and chopped sweet potatoes into crock pot. Sprinkle with chili powder and cinnamon. Dot the sweet potatoes with the coconut oil. Turn crock pot on low and cook for 6-8 hours.
